For my tarts I’m going to use a basic short crust pastry recipe, pretty hard to go wrong but you can use ready roll.
All you have to do is combine
- 200g / 7 oz plain flour or all purpose flour
- Pinch of salt
- 110g / 4 oz butter, cubed or an equal mix of butter and lard
- 2-3 tbsp very cold water
Roll and cut to fit muffin tins
Cook off/caramelise, some red onion with a little sugar and balsamic vinegar
Then put a spoon of onion and a slice of goats cheese in each tart then bake at about 180°C for 15-20minutes
